In 1999 we planted our first olive trees on our Live Oak Road Vineyard located off Highway 46 West in Paso Robles,
California. The first two harvests were in 2004 and 2005 and were fairly small – we only bottled a small quantity
of Olio Nuevo with a few extra cases for the tasting room which sold out immediately.
Olio Nuevo is the freshly pressed oil, unfiltered and still containing all the natural flavor and antioxidant capacity
of the olive. It is best used as a condiment poured over soups, stews, pasta, bread, salad, tomatoes, etc.
This is the most sought after oil in Italy and it is only available for two weeks out of the year.
For those who have never had Olio Nuevo, it is a special gourmet treat. It is much stronger in flavor and
more peppery than settled or filtered olive oil.
Most California produced olive oil is from Spanish olive varieties. Our olive oil is produced only from
Italian Tuscan varieties including Frantoio, Leccino, Maurino, Moraiolo and Pendolino.
